Su combinaci\u00f3n de aromas marinos, el caracter\u00edstico color dorado del arroz y esa presentaci\u00f3n que enamora a primera vista, la convierten en la estre- lla de cualquier mesa.<br \/>\nHoy, desde Paellalia, te traemos la receta tradicional con el truco de los expertos para que logres un arroz sabroso, suelto y con ese socarrat que marca la diferencia.<\/p>\n<p><span style=\"text-decoration: underline;\">Ingredientes (para 4 personas)<\/span><\/p>\n<p>\u2022 500 g de arroz bomba o albufera, ideal para paellas.<br \/>\n\u2022 1 lata de 420ml de Fondo de Pescado Paellalia diluido con 3 partes de agua en la misma lata.<br \/>\n\u2022 3 cucharaditas de Salmorreta Cl\u00e1sica Paellalia.<br \/>\n\u2022 200 g de gambas.<br \/>\n\u2022 200 g de calamares limpios y troceados.<br \/>\n\u2022 200 g de mejillones frescos.<br \/>\n\u2022 200 g de almejas.<br \/>\n\u2022 1 tomate maduro rallado.<br \/>\n\u2022 1 pimiento rojo, cortado en tiras.<br \/>\n\u2022 2 dientes de ajo, picados.<br \/>\n\u2022 Unas hebras de azafr\u00e1n o una pizca de colorante alimentario.<br \/>\n\u2022 Aceite de oliva virgen extra.<br \/>\n\u2022 Sal al gusto.<\/p>\n<p><strong>1. Prepara el sofrito<\/strong><\/p>\n<p>Paso a paso<\/p>\n<p>Calienta un buen chorro de AOVE en la paellera. A\u00f1ade los ajos picados y el pi- miento rojo en tiras. Sofr\u00ede unos minutos hasta que se doren ligeramente con cuidado de no quemar los ajos. Incorpora los calamares y saltea hasta que suel- ten su jugo.<br \/>\nTruco: aqu\u00ed empieza la base de sabor, as\u00ed que t\u00f3mate tu tiempo.<\/p>\n<p><strong>2. Activa el sabor con la salmorreta<\/strong><\/p>\n<p>A\u00f1ade el tomate rallado y, cuando evapore el agua, incorpora 2 cucharaditas de Salmorreta Cl\u00e1sica Paellalia. Remueve bien para que se integre con el sofrito.<\/p>\n<p><strong>3. Marca el arroz<\/strong><\/p>\n<p>Agrega el arroz y sofr\u00ede durante 1 minuto, removiendo para que se impregne de todos los sabores.<\/p>\n<p><strong>4. A\u00f1ade el caldo<\/strong><\/p>\n<p>Vierte el Fondo de Pescado Paellalia ya diluido y caliente. Incorpora el azafr\u00e1n o colorante. Sube el fuego hasta que rompa a hervir.<\/p>\n<p><strong>5. A\u00f1ade el azafr\u00e1n.<\/strong><\/p>\n<p>Muele el azafr\u00e1n en seco en el mortero y a\u00f1\u00e1dele un poco de caldo de la paelle- ra, deja 1 minuto y devu\u00e9lvelo a la paellera. En caso de no usar azafr\u00e1n sino colo- rante, a\u00f1ade un poco al caldo para darle color.<\/p>\n<p><strong>6. A\u00f1ade el marisco final<\/strong><\/p>\n<p>Cuando el caldo empiece a reducir, coloca con mimo las gambas y los mejillo- nes (ya limpios) por encima, creando una presentaci\u00f3n apetitosa y ordenada.<\/p>\n<p><strong>7. Cuece el arroz en tres tiempos<\/strong><\/p>\n<p>\u2022 6 minutos a fuego alto.<br \/>\n\u2022 6 minutos a fuego medio.<br \/>\n\u2022 6 minutos a fuego bajo.Una vez transcurridos esos 18 minutos, sube el fuego durante algo m\u00e1s de 1 mi- nuto si quieres potenciar el socarrat.<\/p>\n<p><strong>8. Reposo obligatorio<\/strong><\/p>\n<p>Apaga el fuego y cubre la paella con un pa\u00f1o limpio durante 5 minutos. Este paso permite que el arroz termine de asentarse y los sabores se redondeen.<\/p>\n<h3><strong>Trucos de expertos Paellalia<\/strong><\/h3>\n<p>\u2022 <strong>El fondo lo es todo:<\/strong> Nuestro Fondo de Pescado concentra el aut\u00e9n- tico sabor del mar.
